The apple cinnamon muffins I made the other day were great, but not quite coffee cake, which was what I was going for.
Vegan, Sugar-free Apple Cinnamon Coffee Cake
2/3 cup spelt or whole wheat flour
1/2 cup barley flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/2 cup applesauce
1/2 cup agave nectar
filling:
1 1/2 cups chopped apple
1/4 cup agave nectar
2 tbsp flour
1/2 tsp cinnamon
1 tbsp non-hydrogenated butter substitute
In a bowl, mix the dry batter ingredients, and in another bowl, mix the applesauce and agave nectar. Add the apple and agave mixture to the dry ingredients, and mix well. Stir filling ingredients until evenly combined. Pour half of the batter into an oiled 9 inch pan, and spread filling on top. Pour the remaining batter on top. Bake at 325 for 35 minutes or until a knife stuck into the middle comes out clean.
